This simple Asian-style salad features cooked chicken tossed with salad greens, noodles, almonds, and poppy seeds and a tasty vinaigrette
Dressing
4 tablespoons sugar
2 teaspoons salt
1/2 teaspoon black pepper
4 tablespoons white vinegar
1/2 cup salad oil

4 cooked chicken breasts, cut in bite-sized pieces
1 1/2 heads lettuce, torn in bite-sized pieces
3 green onions, thinly sliced

1 package (4 ounce size) slivered almonds

Combine the sugar, salt, pepper, vinegar, and salad oil in a jar with lid or other container. Shake well to combine. Refrigerate the dressing until ready to serve.

What kind of vinegar?
We used rice wine vinegar when we made it but white vinegar or other white wine vinegar would both work fine too.

A delicious salad! The dressing is simple but adds plenty to the recipe. The combination of the chicken and chow mein noodles adds flavor and crunch. Hearty enough as a dinner salad or simple enough as a side salad.
