Low-Fat Fruited Chicken Salad

ingredients
4 cups cooked chicken breast, coarsely chopped
1/4 cup thinly sliced celery
2 tablespoons chopped green onion
4 ounces pineapple chunks (reserve juice)
1 cup grapes, seedless
1/4 cup raisins
1 apple, chopped
1/4 cup slivered almonds
1 cup fat-free mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon curry powder
2 tablespoons reserved pineapple juice (or to taste)
directions
In a large bowl, combine the chicken, celery, green onion, pineapple, grapes, raisins, apple and almonds.
In a small bowl, combine the mayonnaise, mustard, curry powder and reserved juice. Stir to mix thoroughly, then combine with the chicken mixture until moistened.
Chill for 1 hour to blend the flavors. Serve on lettuce leaves or in a sandwich.

Loved this recipe, though I made some changes. I didnt have pineapple, so I omitted the fruit and juice, and used lemon juice instead. I also didn't have grapes. I used olive oil mayo instead. I estimated quantities and mixed to desired consistency. Turned out great!

I love this chicken salad recipe. You would never guess it uses fat free mayo. I leave out the almonds to reduce the fat a little more. Also I substitute dried cranberries for the raisins, which I think is a perfect complement to the other flavors. I live alone and cut the recipe but still make plenty to have for a few days.
This is my standard chicken salad recipe, and I always get raves. Even better the next day..if anything is left!
