If you like buffalo wings then you'll love the buffalo-style flavor in this chicken salad. Breaded chicken tenders get dressed up in hot sauce and Cajun seasoning and top a bed of salad greens. Add a drizzle of blue cheese salad dressing and dig in!
1 tablespoon Tabasco hot pepper sauce
1 tablespoon water
1 1/2 teaspoon Cajun seasoning
1 pound frozen breaded chicken breast tenderloins or nuggets
2 cups diced celery
1 cup grape or cherry tomato halves
1/4 small red onion, sliced into thin wedges
1 package (12 ounce size) mixed salad greens with romaine and leaf lettuce
1/2 cup blue cheese salad dressing
In small bowl, combine hot pepper sauce, water and seasoning mix; whisk until blended.
Pour mixture into resealable plastic food storage bag. Add chicken; toss until evenly coated with seasoning mixture.
Place chicken on stoneware baking pan. Bake according to package directions.
Toss vegetables with greens; place in 3-1/4 quart serving bowl. Cut chicken crosswise into slices; arrange over salad. Serve immediately with dressing.

I was testing a recipe for blue cheese salad dressing and wanted a real salad to try it on. I also had just bought some gluten-free breaded chicken tenders (which I LOVE!) so this recipe was a perfect match. The spicy mixture on the chicken was really good without overpowering the rest of the salad. It had just the right kick to it and amont of buffalo sauce flavor.
