1 package (8 ounce size) tortellini 8 ounces Monterey Jack cheese, divided 4 chicken breasts, boned skinned, cubed flour for coating 3 tablespoons olive oil 3/4 cup onion, chopped 1 tablespoon chicken bouillon granules 1 cup chicken broth 1 can (4 ounce size) mushrooms, drained 1/2 cup sour cream
Preheat oven to 300 degrees F.
Cook tortellini 5 minutes less than package directions indicate, so that in the oven, the pasta still will be able to absorb juices without becoming mushy. Drain well and place in bottom of lightly greased 8 1/2 x 11 inch pan.
Thinly slice half of the cheese and spread over the pasta.
Roll chicken breasts in flour and lightly brown in olive oil.
Remove chicken from pan and cook the onions in the same pan until transparent.
Add bouillon. chicken broth, and mushrooms. Bring to a slow boil and cook for 5 minutes.
Add the remaining cheese and continue cooking until cheese is melted. Turn off heat.
Add sour cream and blend well.
Place the chicken pieces over the tortellini in pan. Pour the sauce over the chicken and cover with foil.
Loved it! Followed the recipe to a T and it turned out just like everyone claimed it would. Huge hit with the fam.

I made this for a weekend away and it was a huge hit! I blanched some broccoli and threw it in the casserole as well to make it a complete meal in one pan. Will absolutely make this again!

Will definitely make this again! I only had 4 oz of Monterey Jack so mixed with Cheddar and it was still awesome! I also breaded my chicken w/ flour, italian bread crumbs, 7 grain mix and Flaxseed to try and make it a bit healthier. Served it with brocolli! My kids even ate it!

I made this for my daughter's 22nd birthday dinner for fifteen guests. Everyone loved it. Very easy recipe. It's a keeper!

I made this for friends exactly as written and for my daughter omitting the chicken, as she is a non-meat eater. Both raved about this dish and it was an interesting departure from the "normal" way of eating tortellini. Excellent and I will ba making again this weekend!

This Casserole is GREAT!!! Everyone I make it for loves it. It's not difficult to make; a little time consuming, but well worth it.

Made this casserole for 4th of July 06! Everyone loved it. This will be something I will make often, it was excellent! We Loved it! Served with a nice green salad and some good dark bread...a little glass of wine. Perfect!
