It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Tortellini con panna is a delicious Italian dish made with tortellini in a cream (panna) sauce. It's perfect for a special occasion or date night.

2 packages (12 ounce size) frozen tortellini
1 pint unsalted whipping cream
1/4 pound butter
salt and black pepper, to taste
1 teaspoon dried basil
1/2 cup freshly grated Parmesan cheese
fresh basil, optional
Bring a pan of salted water to a boil over medium-high heat. Add the frozen pasta and cook for 15 minutes or until al dente. Drain the pasta but do not rinse it. Set aside.
Combine the cream, butter, salt, pepper, and basil in a deep skillet over medium-low heat. Cook, stirring occasionally, until the butter has melted.
Add the tortellini to the cream sauce along with the Parmesan cheese. Cook, stirring occasionally, over medium-low heat until the sauce thickens.
Divide the tortellini con panna between individual bowls or plates and serve immediately. Garnish with fresh basil, if desired.
