Kowloon's chicken wings are legendary in the culinary world. These delicious chicken wings are crispy on the outside while retaining a juicy, tender texture on the inside.

3 tablespoons salt
2 tablespoons sugar
6 tablespoons water
6 tablespoons soy sauce
1 tablespoon gin
1/4 teaspoon ground ginger
3 pounds chicken wings, tips removed
1 quart vegetable oil, for frying
Combine the salt, sugar, water, soy sauce, gin, and ginger. Place in a zip-top plastic bag and mix to dissolve the sugar and salt.
Add the wings to the bag and seal it. Place in the refrigerator for 24 hours, turning the bag occasionally to evenly coat the wings in the marinade.
When ready to cook, heat a large skillet over medium-high heat. Add the oil. When hot, add the chicken and cook about 8 minutes per side or until golden brown and cooked through.
Serve hot with fried rice or your favorite dipping sauce.
