60 eggroll wrappers
1 pound mild or hot Italian sausage links
1 package (6 ounce size) pepperoni slices, coarsely chopped
1 red bell pepper, seeded and finely chopped
1 green bell pepper, seeded and finely chopped
1 large onion, finely chopped
1 can (4 ounce size) mushrooms, well drained and finely chopped
2 jars (14 ounce size) pizza sauce
3 packages (8 ounce size) shredded pizza cheese
Heat a skillet over medium heat. Add the Italian sausage and cook, turning as needed, until cooked through, about 15 minutes. Thinly slice the sausage on the diagonal.
Combine the sausage, pepperoni, bell peppers, onion, mushrooms, pizza sauce, and cheese in a large bowl. Mix well.
Place 1/4 cup of the sausage mixture on the lower third of an egg roll wrapper. Fold the sides in then roll up from the bottom. Seal the edges with a little water if needed. Place on a sheet of waxed paper while you repeat the process.
Heat oil in a deep fryer to 380 degrees F. Add the egg rolls in batches and cook for 5-6 minutes, turning as needed, until golden brown. Remove with a slotted spoon and let drain on paper toweling.
Serve hot with heated pizza sauce or other dipping sauce.
Cooked egg rolls do not store well. Uncooked egg rolls can be frozen and kept in an airtight container. Thaw before cooking.

LOVED these! My only complaint (and I couldn't even bring myself to knock down the rating over it) was that the filling only filled about half the eggroll wrappers that the recipe states. I froze the completed eggrolls ahead of time and then just deep fried them when we were ready to serve them. They were so tasty! You can tweak the filling if you want to change up the pizza-ish flavors or make a meatless version.
