Pizza Rolls

INGREDIENTS:
60 eggroll wrappers
1 pound mild or hot Italian tube sausage
1 package sliced pepperoni (slices sliced in half)
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
1 large onion, finely chopped
1 can (4 ounce size) mushrooms, finely chopped
2 jars (14 ounce size) pizza sauce
3 packages (8 ounce size) shredded pizza cheese
DIRECTIONS:
Cook the Italian sausage and thinly slice, diagonally. Mix all ingredients in a large mixing bowl, except for the eggroll wrappers.
After all the ingredients have been mixed together, place about 1/4 cup of the mixture on the eggroll wrapper and roll up eggroll style.
Deep fry for about 5-6 minutes at 375 - 400 degrees F.
COOK'S NOTES:
Can be frozen (uncooked).

LOVED these! My only complaint (and I couldn't even bring myself to knock down the rating over it) was that the filling only filled about half the eggroll wrappers that the recipe states. I froze the completed eggrolls ahead of time and then just deep fried them when we were ready to serve them. They were so tasty! You can tweak the filling if you want to change up the pizza-ish flavors or make a meatless version.
