Slow Cooker White Beer Cheese Dip

ingredients
1 cup beer
2 tablespoons prepared horseradish
2 cloves garlic, finely chopped
1 teaspoon Tabasco sauce or other commercial hot sauce
1 small onion, finely chopped
3 jalapeno peppers, seeded and chopped very fine
6 cups Asadero cheese, shredded
directions
Add the beer to the crock pot. Slowly whisk in the horseradish, garlic, and hot sauce. Add the onion, jalapenos, and cheese and stir gently to combine.
Cover the crock pot and cook on low for about an hour or until the cheese is melted and hot.
Stir before serving. Serve with tortilla chips for dipping.

I haven't been able to find asadero cheese so I use monterey jack which seems to work just fine in this recipe. It's spicy and very creamy. Serving it from the crock pot keeps it from seizing up as it cools.
