Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

Baked mozzarella and gruyere with pan-fried chorizo makes a craveable melty topping to some warm tortillas. Amazing as a queso dip for tortilla chips, too!

4 ounces Mexican-style chorizo
4 ounces grated mozzarella cheese
4 ounces Gruyere cheese
corn or flour tortillas
Preheat oven to 400 degrees F.
Remove casing from chorizo and crumble into small pieces.
Heat a small skillet over medium-low heat, add chorizo, and cook, stirring often, until fat is rendered and chorizo is lightly browned, about 15 minutes.
Meanwhile, scatter mozzarella and gruyere evenly in a medium gratin or baking dish. Use a slotted spoon to arrange chorizo down the center of the dish on top of the cheese.
Bake until cheese is browned and bubbling, about 15 minutes. Serve with warm corn or flour tortillas.
