Copycat Chili's Skillet Queso

The easiest, cheesiest dip you could imagine. Ground beef, tomatoes, with chiles and Velveeta cheese make up a meaty and substantial queso that's perfect on game day with a bowl of tortilla chips.

ingredients

1 pound ground beef
1 package (16 ounce size) Velveeta cheese, cut into cubes
2 cans (10 ounce size) Rotel diced tomatoes with green chiles

directions

Brown the ground beef in a large skillet over medium-high heat. Drain off any extra grease.

Stir in the cheese and tomatoes. Mix well. Bring to a boil then reduce the heat to a low simmer. Cook, stirring occasionally, until the cheese is melted.

Serve warm with tortilla chips. Also good with French fries and tater tots or drizzled over nachos.

    I substituted part of the velveeta with cream cheese. Wonderful!! Couldn't stop eating it.

    I have not tried this recipe, nor the one here, but a waitress told me she used a large block of cream cheese and a can of Hormel No Bean Chili.

    This dip is good, in the south we just call it velveeta dip, but it is NOT chili's skillet queso!

    If you change the recipe ratio to reflect 1 pound velveeta to 2 cans chili, I think you will find the taste to mimic skillet queso!

    This recipe is okay. Chili's actual queso is made with the cheese, a little sour cream and some of chili's red chili. that is the original recipe and btw they call it "Shlock" in the back.

    Oh my goodness!! Sooooo good!! I especially like it warm, tastes so much better than if you refrigerate it.

    I thought the dip was okay but that it tasted nothing like Chili's Skillet Queso. Last time I was in Chili's I asked if they knew the recipe but they did not. One cook told me he thought there was ground beef in it. I'd have to agree.
