This cheese dip is creamy, gooey, and delicious, with a subtle chile heat that adds an extra kick to it. A must-have at any party or just for a late night curled up watching television, this cheesy dip is quick and simple to make.
1 box (1 lb size) pasteurized processed cheese (like Velveeta)
1 can (10 ounce size) diced Rotel tomatoes with chiles, undrained
Slice the cheese into small cubes and place in the crock pot. Pour the Rotel tomatoes with the liquid from the can over the cheese.
Cover the crock pot and cook on low heat for 2-3 hours or until the cheese is melted.
Serve the Rotel cheese dip warm with your favorite dippers.
Store leftover dip in a tightly covered container in the refrigerator with a piece of plastic wrap flush on the surface of the cheese dip to prevent a film from forming.

So easy and so good. There wasn't a drop left. Wish I had known how much everyone would love it because I would have made two batches of it. One friend said that she makes something similar but adds browned sausage to it so I might try that next time too or do one of each. I highly recommend this dip!

We call this white trash dip but don't let that make you think we don't like it. It's addicting. Serve with good dipping tortilla chips. You can also use this as a cheese sauce on nachos.
