1 cup onion, chopped
3 tablespoons butter
2 cans (10 ounce size) Rotel diced tomatoes with green chilies
1 can (14.5 ounce size) stewed tomatoes, chopped
2 pounds processed cheese, such as Velveeta
1 pound sharp cheddar cheese, cubed
Corn chips, Triscuits or sliced vegetables
Saute onions in butter. Add tomatoes with chilies and stewed tomatoes; cook until thick. Add processed and cubed cheeses. Cook until thick and smooth, stirring often to keep from sticking. Refrigerate overnight.
Heat to eat. Serve with corn chips, Triscuits or vegetables.

If anybody is interested, I work at Don Pablo's for 8 years back in the late 90s and early 2000, all that was in the queso was our house salsa, a commercial version of Velveeta, about a tablespoon of garlic powder, a wee bit of milk and water and salt. The difficult part is finding salsa that tastes similar to Don Pablo's salsa, the salsa was made fresh in the morning everyday by the Mexicans who ran the prep kitchen and the salsa was so freaking delicious oh, I have never found a salsa that can even compare. I wish to God I had that recipe because then I could make queso exactly like Don Pablo's. This recipe is a decent replica, and it's very tasty oh, but I was missing the garlic and the cilantro that were in the real article

This is dang near spot on! I followed the recipe as is except I used the Queso Blanco flavor of Velveeta. I may try the original next time to compare. I am so pleased! I dearly miss Don Pablo's. Thank you!!!

I have been trying to get the flavor in this dip for months. This is right on the Spot. All my guys liked it.
