ingredients
8 ounces egg noodles, yolk-free
3 eggs
2/3 cup sugar
16 ounces sour cream, light (or nonfat vanilla yogurt)
8 ounces nonfat cottage cheese
1 teaspoon vanilla extract
2 tablespoons butter or margarine
1/2 cup chocolate chips
cornflake crumbs
cinnamon-sugar, for topping
directions
Boil noodles and drain in cold water.
In a bowl, beat together eggs and sugar. Then add cottage cheese, sour cream and vanilla. Melt butter and use 1/2 in the mixture (save the rest). Fold in the noodles and chips to the mixture.
In a 9- x 13-inch pan, put rest of the melted butter on the bottom and sprinkle cornflake crumbs over the butter. Fold in the noodle mix. Sprinkle lightly with cinnamon-sugar.
Bake at 350 degrees F for one hour or until brown.
