Chocolate Chip Kugel
INGREDIENTS:
8 ounces egg noodles, yolk-free
3 eggs
2/3 cup sugar
16 ounces sour cream, light (or nonfat vanilla yogurt)
8 ounces nonfat cottage cheese
1 teaspoon vanilla extract
2 tablespoons butter or margarine
1/2 cup chocolate chips
cornflake crumbs
Cinnamon-sugar -- for topping
DIRECTIONS:
Boil noodles and drain in cold water. In bowl, beat together eggs and sugar. Then add cottage cheese, sour cream and vanilla. Melt butter and use 1/2 in the mixture; (save the rest). Fold in the noodles and chips to the mixture.
In 9x13- inch pan put rest of the melted butter on the bottom and sprinkle cornflakes crumbs over the butter. Fold in the noodle mix. Sprinkle lightly with cinnamon-sugar. Bake at 350 for one hour or until brown.
