Broccoli-Potato Kugel

ingredients
1 medium onion, diced
4 tablespoons vegetable oil, divided
3 cloves garlic, chopped
2 pounds potatoes, peeled and boiled
6 large eggs
1/3 cup mayonnaise
1/3 cup matzo meal
1 tablespoon salt
1/2 teaspoon ground black pepper
2 pounds broccoli, cut into florets and cooked
4 tablespoons panko or challah crumbs
directions
Saute onion in 3/4 of the oil in a small frying pan over medium heat until browned. Add garlic and stir for a minute or two.
In large mixing bowl, mash potatoes and stir in eggs, one by one, incorporating well. Add mayonnaise, matzo meal, salt and pepper, stirring well. Fold in onion and broccoli.
Grease a 9-by-13-inch baking pan with remaining oil and spoon in mixture, spreading evenly. Sprinkle with panko or challah crumbs.
Preheat oven to 350 degrees F and bake kugel for 50 minutes or until golden.
