ingredients
1 1/4 pound boneless, skinless chicken thighs
1/3 cup mojo criollo sauce, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
3 tablespoons mojo criollo sauce
3 teaspoons olive oil
1/2 cup chopped red onion
1/2 cup sliced radishes
2 tablespoons chopped cilantro
1 avocado
8 flour tortillas, warmed
2 cups shredded lettuce
directions
Put chicken, 1/3 cup mojo sauce and 1 tsp. oil in a plastic zip lock bag. Seal bag, turn to coat chicken, and refrigerate for 30 minutes.
Heat broiler. Line broiler pan with foil, then coat foil with cooking spray.
Remove chicken from marinade and place on a broiler pan. Drizzle with some of the marinade. Broil for 15 minutes. Turn and drizzle with more marinade, then broil until cooked through. Cut into bite-size chunks.
Dice avocado. Toss with onion, radishes, cilantro, 3 tbs. mojo sauce and 2 tsp. oil in a bowl. Put lettuce on top half of tortillas, then top with chicken and avocado mixture. Fold bottoms over filling.
Place on serving plates. Enjoy.
