Shredded chicken is mixed with a spicy chipotle sauce and piled in taco shells with your favorite toppings.
1 1/2 cup shredded, cooked chicken
1 tablespoon chipotle chili in adobo
1 tablespoon adobo sauce from can
1/3 cup mayonnaise
8 hard taco shells, or use flour tortillas
1/4 cup shredded cheese, cheddar or Mexican blend
1/2 cup shredded lettuce
1 roma tomato, diced
2 green onions, sliced
Mix together the shredded chicken, chipotle pepper with adobo sauce, and mayonnaise in a microwave-safe bowl. Heat on high for one minute. Mix the chicken mixture again. If it is not heated through, heat it on high for 20-30 more seconds.
Spoon about 1/4 cup of the chicken chipotle mixture into each taco shell. Top as desired with shredded cheese, shredded lettuce, diced tomato, and green onions.
Serve the creamy chipotle chicken tacos immediately.

These tacos were a huge hit! The creamy chipotle chicken mixture is wonderful. It's got heat but the lettuce and tomato helps cool it down.
