Picture this: you and your friends, with scrumptious spicy chicken sausage tacos, kicking off a fun night in.

under 30 minutes
ingredients
12 (6-inch size) flour tortillas
3 link chicken sausages
2 tablespoons extra virgin olive oil
1 large red bell pepper, cored, seeded and thinly sliced
1 large red onion, thinly sliced
1 cup fresh or frozen corn kernels
sea salt and black pepper, to taste
Greens
2 tablespoons extra virgin olive oil
5 teaspoons minced garlic
12 ounces mixed greens such as baby collard greens, kale, spinach, swiss chard, etc., washed and cut into half-inch slices
1 teaspoon crushed red pepper flakes
sea salt and black pepper, to taste
1 cup crumbled queso fresco, feta, or goat cheese
directions
Heat the tortillas as directed on the package. Wrap in foil to keep warm or use a tortillero.
Remove the casing from the sausages. Heat a large skillet over medium heat. Add the sausages and cook, crumbling the meat while stirring, until cooked through and broken up. Remove the chicken sausage to a bowl and keep warm.
Add the olive oil to the skillet. Turn the heat to medium-high and scrape the bottom of the skillet with a wooden spoon or spatula to loosen any browned bits. Add the bell pepper, onion, and corn. Cook stirring frequently, for 4 minutes or until browned but crisp-tender.
Cook the greens in another large skillet by heating the olive oil and garlic over medium-high heat for 1 minute. Add the greens and crushed red pepper flakes. Cook, stirring frequently, until the greens are wilted. Season to taste with salt and pepper.
To serve, layer some of the greens, corn mixture, chicken sausage, and crumbled cheese on each warm tortilla. Fold the tortilla and serve with any additional toppings as desired.
recipe tips
Try different herbs and spices mixed into the sausage for other flavor combinations like Italian seasoning or smoked paprika.
For added texture, consider topping the tacos with shredded cabbage or radishes.
If you enjoy a spicier kick, increase the amount of crushed red pepper flakes or add sliced jalapenos.
Prepare the toppings and filling in advance for a quick assembly if serving guests.
Use whole wheat or corn tortillas for a healthier or gluten-free option.
Feel free to saute the vegetables longer for a softer texture if you prefer that over a crunchy bite.
Try adding black beans or refried beans to the filling for extra protein.
Make a double batch of the filling and use it for breakfast hash the next day.
common recipe questions
Can I use other types of sausage instead of chicken sausage?
You can substitute other types of sausage such as turkey sausage, pork sausage, or even plant-based sausage.
What toppings can I add?
You add toppings like avocado, guacamole, chopped fresh cilantro, pickled onions, or a squeeze of lime juice, or a dollop of sour cream or Greek yogurt.
Can I use canned corn?
If you don't have fresh or frozen corn, canned corn can also work, but make sure to drain and rinse it well before using.
Can I make this recipe with other vegetables?
Feel free to use other vegetables such as zucchini or mushrooms, or what you have on hand. Just adjust cooking times as needed.
How can I store leftovers?
Leftover sausage and greens should be stored in an airtight container in the refrigerator. They can last for up to 3-4 days. Keep the tortillas and filling apart to maintain freshness.
Can I freeze the filling?
Yes, the filling can be frozen. Cool it completely before transferring it to freezer-safe containers. It should be consumed within 2-3 months.
How do I reheat leftovers?
To reheat leftovers, you can use a microwave or a skillet. In the microwave, cover the container and heat in short bursts, stirring in between for even heating. In a skillet, add a splash of water or broth, cover, and heat over medium until warmed through.
What is the best way to warm tortillas?
The best way to warm tortillas is on a dry skillet over medium heat for about 30 seconds on each side, or you can wrap them in foil and place them in a warm oven (300 degrees F) for a few minutes. A microwave with a damp paper towel can also work, but be mindful not to over-steam them.

Tongs or Fork: Helpful for assembling the tacos and layering the ingredients onto the tortillas.

Guacamole: The creamy texture of guacamole complements the sausage and other taco filling ingredients.
Pickled Red Onions: Their sharpness boosts the overall flavor, cutting through the richness of the sausage and adds a crunchy texture.
Fresh Cilantro: A sprinkle of fresh cilantro can add an herbal note that pairs well with the spices in the dish.
Avocado Crema: This silky sauce offers a mild flavor that rounds out the heat from the filling.
Chili Oil Drizzle: A small drizzle can intensify the spiciness of the tacos, creating a bolder flavor for those who enjoy heat.
Lime Wedges: Fresh lime juice can brighten flavors and add a zesty kick that complements both the sausage and the veggies.

beverage pairings
Wine Pairings
Sauvignon Blanc: Look for this bright and zesty white wine, with crisp acidity and citrus notes. It goes great with the spicy filling and fresh veggies, complementing the flavors without being too heavy. A bottle with herbal hints can tie in nicely with the greens.
Grenache: A fruit-forward Grenache, with cherry and berry flavors, will work well here. Its soft tannins won't overpower the spices, and it pairs perfectly with the richness of the cheese and the savory sausage.
Chardonnay: A lightly oaked Chardonnay, with buttery and tropical fruit notes, can balance the spices and richness of the dish.
Other Alcohol Pairings
Pale Ale: A classic pale ale, with its balance of hops and malt, offers a refreshing contrast to the spicy chicken tacos.
Tequila: A smooth blanco tequila or a fresh margarita can elevate your taco night. Its sharpness amps up the flavors of the spices and herbs in the tacos without clashing.
Sangria: A fruity sangria can bring a fun twist to the table. Look for one made with a dry red wine, mixed with citrus fruits and a touch of sweetness to balance the spices in the tacos.
Non-Alcoholic Pairings
Orange Juice: A fresh glass of orange juice can add a sweet and zesty note to your meal, which will work well with the spiciness of the tacos. Opt for one that's freshly squeezed if you can.
Pineapple Juice: This sweet and tangy option can provide a fun contrast to the flavors in the tacos. Pineapple juice's fruity flavor will play nicely with both the sausage and vegetables.
Hibiscus Tea: A chilled hibiscus tea, with its floral and slightly tart flavor, can be a refreshing non-alcoholic choice. It pairs well with the spices and adds a unique taste that complements the dish.
