Rice and veggie tacos are an absolutely stand-out option for quick and easy meals. Well-spiced rice with tomatoes and any number of add-ins will always make a tasty taco.

1 small onion, minced
4 cloves garlic, minced
1 can (15 ounce size) diced tomatoes, drained
1 can (6 ounce size) chopped green chiles
1/4 cup water
1 package taco seasoning mix
2 cups cooked rice
12 corn tortillas
lettuce, cheese, tomatoes, etc for topping
Add a little oil or non-stick cooking spray to a large skillet over medium heat. Add the onions and garlic. Cook, stirring frequently, until the onions are soft.
Stir the tomatoes and green chiles into the onion mixture. Cook for 1 minute stirring frequently.
Add the water and taco seasoning. Bring the mixture to a boil and let cook for 5 minutes or until the sauce thickens.
Stir in the cooked rice. Mix well and let simmer until most of the liquid has absorbed.
To serve, divide the rice mixture between the tortillas and top with desired toppings. Serve immediately.
