Caramelized Onion Jam

ingredients
3 tablespoons butter
4 large onions, sliced
2/3 cup firmly packed brown sugar
1/2 cup brown malt vinegar
1 teaspoon finely chopped fresh rosemary
directions
Heat butter in a large pan. Add onions and cook gently for 20 to 30 minutes until onions are very soft and lightly browned.
Add sugar and stir to melt sugar. Simmer uncovered, stirring occasionally until mixture is thick and caramelized.
Add vinegar and simmer uncovered for about 5 minutes until thickened slightly. Stir in the rosemary.

I used red onions instead of brown which maintained their awesome colour, seemed to have alot of excess liquid but tipped some off and reduced the rest. Delicious in steak open sandwiches.

This is a great recipe...left out the rosemary as well. Great on roast beef sandwiches...

Was looking for a recipe like this & have made it twice now. Both times without rosemary. I use it as a relish with cooked Kale & Chard greens. Very good--Thanks!

Have made this twice now. Left out the fresh rosemary each time (forgot the first time). Still great. Served it as a garnish to an onion tart at a dinner party and everyone loved it and asked for the recipe!
