1 1/4 cup fresh jalapeno peppers, sliced
1/2 cup sugar
1/4 cup water
green food coloring, optional
Combine jalapeno slices, sugar and water in small saucepan. Bring to a boil, then reduce heat and simmer 15 to 20 minutes until jalapenos are cooked and liquid has boiled down to a thick syrup.
Remove from heat and add 1 drop green food coloring, if desired, to tint syrup. Place in a clean jar and refrigerate.

Does anyone know if this would work with splenda? I love hot peppers but want less carbs.

good recipe. takes longer than 20 minutes to boil down to a syrup though but maybe I turned the heat down to far. I didn't add the food coloring but I think I will next time because the jalapenos lose some of their bright color when cooked.

I was very pleased with this recipe. It took longer than posted but it turned out. I think the reason someone thought it was too thin was because she did not wait for it to cool. It turned out great for me though I think I will add a little more water than called for so it won't be as thick. I will make this often as we love it with cream cheese and crackers! Thanks!!

I tried this tonight and something is wrong.I think maybe too much water?? The mixture never did boil down to the candy stage, boiled 25 minutes, gave up and turned off. More like runny pancake type syrup, far from candied jalepenos.
