6 green chilies (hotness to your preference)
6 cups sugar
1 1/2 cup cider vinegar
cheesecloth
6 ounces liquid pectin
6 drops green food coloring
Wash and mince chiles. Combine chilies, sugar and vinegar in a large saucepan or kettle and boil mixture at high heat for 5 minutes. Pour boiled mixture through cheesecloth to remove seeds. Return mixture to saucepan or kettle.
Add Pectin and food coloring to mixture and boil for 1 minute. Skim off any foam that may have formed.
Pour mixture into hot, sterilized half pint canning jars. Seal according to manufacturer's directions.
Process jars in a boiling water bath for 5 minutes. Test seal when cooled.

This looked like a great recipe. As we read it and began getting our ingredients together we noted the quantity of pectine and the yeild of the recipe didn't match what we expected. We read the one comment posted and agreed. Too much pectin. We wanted more than 6 - 1/2 pint jars too. Although we also thought it was a lot of sugar for only 6 jars. We doubled the recipe on every thing except the pectine and only added 1 drop of food coloring since we wanted a more natural look to the finished product. We got a yeild of 24 1/2 pint jars. So reduce the pectine to one packet and expect 12 1/2 jars. Food coloring is optional. It was a real challenge to boil up clean jars after we realized we needed more.

I have been looking for a green chile jelly recipe. I used to live in NM and could easily find it in stores, but I've moved and can't find it anymore. This recipe was a piece of cake to put together, and it tasted good before I canned it. I think, however, that it calls for too much pectin. 6 oz. is 2 packages of liquid pectin, and the jelly was starting to set up before I even got it in the jars. I haven't opened any yet, but it looks pretty solid in the jars. Next time I will try one 3 oz package. I also used just 1 drop of green food coloring, it was plenty, and I might not bother next time, because even that much looks artificial to me.
