Mashed Parsnips With Brown Sugar

ingredients
1 pound fresh parsnips, peeled and sliced
1/2 cup water
margarine to taste
salt and pepper, to taste
1/4 cup brown sugar, maple syrup or honey
2 tablespoons finely minced parsley, optional
directions
Steam or boil parsnips in a saucepan in the slightly salted water until each slice pierces easily (Microwave in a microwave-safe covered container for 6 to 8 minutes for better flavor). Drain water.
Add all remaining ingredients and stir to blend to desired consistency. Either lumpy or smoothly mashed, fresh parsnips prepared this way are distinctive and incredibly delicious.
