ingredients
3 cups uncooked instant rice
3 cups water
1 can (10 ounce size) Rotel tomatoes
1 tablespoon chicken bouillon granules
3/4 cup sour cream
1 1/2 cup shredded cheddar cheese
directions
Combine rice, water, tomato and bouillon, mix well. Pour into greased 2-quart microwave dish, cover and microwave on high 10 minutes.
Stir in sour cream and 1/2 of cheese, mix well. Sprinkle with remaining cheese. Cover and microwave until cheese melts - about 1 minute longer.
