Spice up your rice, spice up your life! A little butter and parmesan adds depth of flavor to basic white rice and makes it into an easy, satisfying side dish. Throw in some Italian sausage to make it a meal.

1 cup long grain white rice
1 3/4 cup water
1 tablespoon butter
1 pinch salt
freshly grated Parmesan cheese
Bring all ingredients except Parmesan to a boil in a saucepan over medium-high heat, stirring frequently.
Reduce the heat to a low simmer. Cover the pan and let simmer for 15 minutes or until the liquid is absorbed.
Turn off the heat and stir in the Parmesan cheese as desired. Cover and let the rice sit for 5 minutes. Remove the cover and fluff the rice with a fork. Serve hot.

Very tasty. I used leftover white rice that I had from another dish. Just reheated the rice with a little water then added the butter & parmesan cheese to taste.

I assume that the rice water and butter are the only things boiled together, and that the parmesan and salt are stirred in to taste. That worked fine. I didn't know what boiling the parmesan would do so I figured I'd better not try it!
