ingredients
2 1/2 cups cooked brown rice
3 green onions, chopped
1 cup low fat cottage cheese
1 teaspoon dried dill
1/4 cup grated Parmesan cheese
1/2 cup milk
1/2 teaspoon dijon mustard, optional
directions
Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish.
Combine the rice, green onions, cottage cheese, dill, Parmesan, milk, and mustard in a bowl. Mix well.
Spoon the mixture into the prepared dish. Place in the oven and bake at 350 degrees F for 15-20 minutes or until heated through.
