Amaranth And Corn

ingredients
1 cup amaranth, rinsed and drained
1/2 cup fresh corn kernels
2 1/4 cups spring or filtered water
1 pinch sea salt
directions
Combine amaranth, corn, and water in a medium pan over medium heat and bring to a boil. Add salt.
Cover, reduce heat and simmer for 30-35 minutes, until all the liquid is absorbed and the grain is creamy.
