2 1/2 cups short or medium grain rice
3 cups cold water
Rinse the rice in cold water and let drain in a sieve for one hour. Stir the rice occasionally.
Transfer the rice to a saucepan with lid. Add the cold water and bring to a boil over high heat. Cover the pan and reduce the heat to a low simmer. Cook, covered, for 15 minutes.
Turn the heat to high again and cook for 1 minute, covered.
Remove the pan from the heat and let stand, covered, for 10 minutes before serving the Japanese-style rice or using in a recipe.
