Oven Baked Spicy Rice

A great, easy side dish made with rice, tomatoes with green chiles, green olives, onion, and Jack cheese.

ingredients

1/2 cup uncooked white rice
1 can (10 ounce size) Rotel diced tomatoes with green chiles, undrained
1/2 cup water
1/2 teaspoon salt
1/3 cup sliced pimiento stuffed green olives
2 tablespoons salad oil
1/4 cup chopped onion
1/2 cup shredded Monterey Jack cheese

directions

Preheat the oven to 350 degrees F. Grease a 1-quart baking dish.

Combine the rice, tomatoes, water, salt, olives, oil, onion, and cheese in a bowl. Mix well. Pour into the prepared baking dish.

Cover the dish with foil and place in the oven. Bake at 350 degrees F for 45 minutes.

Remove the foil and stir the rice. Bake for 15 minutes longer then serve.

    what kind of rice is to be used in this recipe? (brown rice, instant rice, white rice)

    • When a recipe calls for just "rice" it's safe to assume it means white long-grain rice.

    I wasn't sure there would be enough liquid in the recipe but there was and the rice turned out perfect. I used the spicy Rotel to give it a little extra kick.
