1 teaspoon canola oil
1/2 cup basmati rice, rinsed in cold water
1 tablespoon grated lemon zest
1 slice (1 1/4 inch size) fresh ginger, minced
1 cup no-fat, low-salt chicken broth
2 tablespoons lemon juice
2 cups frozen tiny peas
salt and black pepper, to taste
Heat the oil in a skillet over medium-high heat. Add the rice, lemon zest, and ginger. Cook, stirring constantly, for 1 minute to coat the rice in the oil.
Add the broth and lemon juice and mix well. Bring the broth to a boil then reduce the heat to a simmer. Cover the skillet and let the rice cook for 15-18 minutes or until the rice has absorbed most of the liquid.
Add the peas to the skillet and mix gently. Cover the skillet and cook for 2-4 minutes or until the peas are heated through and the rice has absorbed the remaining liquid and is tender.
Season to taste with salt and pepper and serve the rice and peas immediately.
Fluff the cooked rice with a fork before serving.
For a richer dish, stir in a tablespoon of butter or olive oil at the end of cooking.

One lemon had too much juice for this portion. I will try with half lemon and it took me 20 more minutes to simmer the rice-added one more cup of water. Interesting and I think would be best in summer.

This was SO good!!! Nice amount of lemon flavor and the ginger added a little warm spiciness.
