1 1/2 pound fresh rotelle pasta, cooked al dente
8 ounces sweet butter
1 1/2 quart heavy cream
3 tablespoons Cajun seasoning
1 cup chopped green onions
1 1/2 pound crawfish tail meat with fat, shrimp may be used in place
Heat butter in deep skillet until bubbly hot. Add seasoning and stir until well-blended. Add heavy cream and cook until reduced by half. Add green onions, cooled pasta and crawfish meat with fat. Heat through.

Wow! This recipe is wonderful. I had a opportunity to try crawfish monica at a wedding reception. I was thrilled to diplicate this dish at home. I may try to reduce the amount of fat next time. It is very rich. My family loved it.

Love this recipe!! I did add a chopped white onion to butter and sauteed until tender then followed the recipe otherwise. Tastes just like Jazz Fest crawfish monica! Kids, neighbors, everyone loved it!

If you don't mind a few calories, this recipe is perfect as is. You can, however, lower the fat by using half the butter, fat-free half and half and a cornstarch slurry to thicken it. The Cajun seasoning you chose will determine the overall flavor/saltiness so chose a good quality, flavorful brand.
