Crawfish Casserole

ingredients
2 tablespoons butter
1 cup chopped onions
3/4 cup chopped green bell pepper
1 clove garlic, minced
1 pound crawfish tails
2 slices bread
1 can condensed cream of mushroom soup
paprika
1 tablespoon chopped parsley
1 1/2 tablespoon lemon juice
1 1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper
1 1/2 cup cooked rice
1/2 cup milk
directions
Melt butter in a large skillet. Add onions, green pepper and garlic. Cook until tender. Stir in crawfish, soup, rice, parsley, lemon juice and seasonings. Add bread which has been crumbled and soaked in milk. Mix well.
Spoon into a buttered 2 quart casserole. Sprinkle with paprika. Bake at 375 degrees F for 23 minutes.

Absolutely Fabulous! I used jumbo gulfport shrimp and made 2 smaller casseroles from the one recipe. Served with Garlic Bread.(2 Individual casseroles for us southern hearty eaters).My husband finished his but I couldn't finish mine.
