Skewered potatoes make an easy grilled side dish or appetizer. Add extra spices to take this dish up a notch. Serve with your favorite dipping sauces (we're partial to spicy ketchup!)
1 1/2 pound new potatoes, scrubbed, skin on
3 tablespoons olive oil
1/2 teaspoon garlic salt
black pepper, to taste
If using bamboo skewers, soak them in warm water for 20 minutes before using.
Cook the potatoes in boiling water in a large pan over medium-high heat for 15 minutes or until almost tender. Gently drain the water from the pan and let the potatoes cool.
Preheat the grill to medium heat or preheat the oven broiler.
In a bowl, combine the olive oil, garlic salt, and black pepper. When the potatoes are cool enough to handle, cut them in half if small, or in half and then in thick slices if using larger potatoes. Add them to the oil mixture and toss gently to completely coat them.
Thread the potatoes on the skewers. Place on the grill and cook for 10 minutes, turning occasionally until browned. If cooking in the oven, place the skewers on a baking sheet and place 4-6 inches under the broiler for 10 minutes, turning frequently until well browned.
When done, carefully remove the potatoes from the skewers and serve hot with ketchup, mustard, or your favorite dipping sauce.
For a smoky flavor, try adding a sprinkle of smoked paprika to the seasoning mixture.
To prevent the potatoes from sticking to the grill, make sure it's well-oiled before cooking.
Try serving the potatoes with different dipping sauces like aioli, tzatziki, or chimichurri.

New potatoes are recommended for this recipe, as their smaller size works well for skewering and grilling.
While new potatoes are recommended, you can use other varieties of potatoes such as fingerling or baby potatoes.

You won't get quite the same texture but you can definitely cook them in an air fryer instead. Cook them at 400 degrees F for about 8-10 minutes or until golden brown, turning them once or twice during the cooking time. You don't need to thread them on skewers if cooking in an air fryer (but you can).
