ingredients

5 pounds Yukon Gold potatoes peeled and cubed
1 cup ketchup, or to taste
2 tablespoons hot sauce
1 tablespoon garlic powder
2 tablespoons salt
2 tablespoons black pepper
1 teaspoon crushed red pepper flakes
1/2 cup butter

directions

Combine the potatoes, ketchup, hot sauce, garlic powder, salt, pepper, crushed red pepper flakes, and butter in a Dutch oven or large saucepan over medium-high heat. Add enough water to cover the ingredients.

Bring the liquid to a boil, then reduce the heat to a simmer. Let the potatoes cook for about an hour or until just tender. Do not overcook the potatoes, or they will become mushy. Check on the potatoes occasionally to make sure they do not dry out or burn. Add more liquid and reduce the heat if it cooks off too quickly.

Remove the pan from the heat. Adjust the seasoning as needed.

Serve the potatoes immediately, or let them cool, then refrigerate them overnight, and reheat them gently and serve them the next day.

recipe tips

To bring out the BBQ flavor, you can add a tablespoon of smoked paprika or a splash of liquid smoke.

If you prefer a thicker sauce, you can mix in a slurry of cornstarch and water near the end of cooking.

To make the potatoes more tangy, squeeze in some lemon juice or add a splash of apple cider vinegar.

Remember to stir occasionally while simmering to prevent the potatoes from sticking to the bottom of the pot.

common recipe questions

Can I use a different type of potato for this recipe?

Yukon Gold potatoes work well due to their texture and flavor, but you can use other varieties like red potatoes or Russet potatoes.

How can I adjust the spiciness of the dish?

You can control the heat by adjusting the amount of hot sauce and crushed red pepper. Start with a smaller amount and add more to taste.

Is it possible to make this dish less saucy?

You can reduce the amount of ketchup or increase the number of potatoes for a less saucy texture.

How long can I store the leftovers, and how should I reheat them?

Leftovers can be stored in the refrigerator for up to 3-4 days. Reheat them in a microwave or on the stovetop until warmed through.

tools needed

Dutch Oven or Large Saucepan: For combining all the ingredients and water, and for simmering the potatoes until tender. The size should accommodate 5 pounds of potatoes plus additional ingredients.

Measuring Cups and Spoons: For measuring ingredients such as the ketchup, hot sauce, garlic powder, and crushed red pepper flakes.

Cutting Board and Knife: For cutting Yukon Gold potatoes into bite-sized pieces.

Vegetable Peeler: For peeling the potatoes. Alternately, a knife can be used.

Spoon: A large spoon is needed for stirring the ingredients together while they cook.

what goes with it?

Grilled Sausages: Pair these stewed potatoes with smoky or spicy sausages.

Pulled Pork Sandwich: The sweetness and smokiness of the Jack and Coke BBQ sauce in the pulled pork creates a robust flavor that balances nicely with the tangy and spicy boiled potatoes.

Cornbread: The soft texture and slight sweetness of old-fashioned buttermilk cornbread can balance the savory, spicy notes of the potatoes. It's an ideal accompaniment for sopping up the broth.

Coleslaw: A tangy, vinegar-based coleslaw can add a refreshing flavor that offsets the creamy, buttery nature of the potatoes.

Barbecue Chicken: Pair with barbecue chicken for an easy summer meal. The sweet and smoky glaze on the chicken matches well with the spicy, hearty potatoes.

Sour Cream: A dollop of sour cream can add a cool, creamy element that balances the heat and spices in the potatoes.

Chopped Fresh Herbs: Adding fresh parsley or cilantro right before serving can brighten the dish and offer a fresh contrast.

Cheddar Cheese: Shredded cheddar on top can give a cheesy, gooey element to the potatoes.

Crispy Bacon: Crumbled bacon added to the top could provide a smoky, savory crunch.
