Homemade Tater Tots

You can make these tasty tots ahead of time and freeze them for later (or, eat them right away!)

8 medium potatoes, peeled
4 tablespoons all-purpose flour
1 dash black pepper
1 teaspoon salt
canola oil

directions

Place the potatoes in a pan of water over medium-high heat. Bring to a boil and cook until the potatoes are barely fork-tender (you do not want them too soft).

Drain the potatoes and let cool just enough to handle (you want them to still be warm).

Grate the warm potatoes (or use a potato ricer) into a bowl. Add the flour, salt, and pepper and mix well.

Heat 1/4-inch of oil in a deep skillet over medium-high heat.

Form the potato mixture into small balls and drop in the oil. Fry, turning as needed, until golden brown. Remove the tater tots from the hot oil with a slotted spoon and let drain on paper toweling.

To freeze, place the tater tots in a single layer on a waxed paper lined baking sheet. Place the baking sheet in the freezer and freeze until solid. Transfer the tater tots to a zip-top plastic bag and store in the freezer.

To bake the tater tots from frozen, place them on a baking sheet and bake at 400 degrees F until heated through and crispy. Can be used in any recipe calling for commercially made tater tots.

How To Make Cajun And Other Flavor Tater Tots

Add two teaspoons of Cajun seasoning, garlic powder, Italian seasoning, or Mexican seasoning blend to the grated potatoes to spice up the tater tots. You can also add 1 seeded and minced jalapeno or 1/4 cup very finely minced onion.

Can I make these with sweet potatoes?

Yes, although keep in mind the texture won't be quite the same. You may need to adjust the amount of flour added because sweet potatoes have a higher moisture content and lower starch content.
