Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Irish Potato Stew

- #7324

1-2 hrs
ingredients
8 potatoes, peeled and coarsely chopped
1 onion, diced
4 carrots, scraped and cut into 1/4 inch slices
1/4 cup bacon grease,
1/4 cup plain white flour
salt and pepper, to taste
boiling water
directions
Peel potatoes and cut coarsely.
Get a heavy frying pan hot, add the bacon grease (get it hot to almost smoking). Sprinkle the flour around in the grease slowly so as to get the flour cooking without it sticking together. Brown to a light brown consistency.
Watch and stir the cooking flour as this is done under high heat and the flour will burn if you don't watch it close! Do not burn, if you see black specks, start over.
Brown one onion in the mixture. Add potatoes, carrots, and flour mixture to boiling water. Add salt and pepper to taste and let cook until vegetables are tender.

Love buffalo wings? Get that same hot, zippy flavor in everything from deviled eggs to enchiladas. And of course: wings.
