2 pounds small new potatoes, unpeeled, quartered if desired
1/4 cup vegetable oil
1 envelope (1.3 ounce size) dry ranch salad dressing mix
1/4 cup water
1/4 cup chopped fresh parsley

directions

Combine the potatoes, oil, and dry salad dressing mix and toss to coat the potatoes well in the mixture.

Place the water in the bottom of the crock pot (use a 4 to 5 quart size) and add the potatoes. Cover the crock pot and cook on low for 3-4 hours or until the potatoes are tender (gently prick one with a fork to test).

When cooked, sprinkle the potatoes with the chopped parsley. Serve hot.
