Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

30-60 minutes
ingredients
1 teaspoon vegetable oil
1 cup chopped onion
3 cloves garlic, minced
1 1/2 pound new potatoes (3/4" cubes)
1 can (14.5 ounce size) low-sodium chicken broth
1 can (14.4 ounce size) sauerkraut, well drained
OR
1 bag (32 ounce size) sauerkraut, well drained
1 can (8 ounce size) tomato sauce
1 cup chopped green bell pepper
1 tablespoon paprika
1/2 teaspoon salt
1 pound fully cooked, smoked turkey sausage
directions
Heat oil in 12-inch skillet. Add onions and garlic. Saute until tender. Add potatoes and broth. Cover. Simmer 15 minutes.
Add remaining ingredients except sausage. Mix well. Add sausage. Cover. Simmer 10 minutes, or until hot.
NOTE: Rinsing sauerkraut prior to draining removes approximately one-half of its sodium.
