Pork sausage makes the crust for this pizza-like casserole recipe. On top of that is layered cheese, tomatoes, bell pepper, onion and zucchini.

2 pounds bulk pork sausage, browned and drained
2 cups grated mozzarella or cheddar cheese
4 large fresh tomatoes
OR
1 large can diced tomatoes, drained
1 large green bell pepper, sliced
1 large onion, sliced in rings and separated
1 medium (12-14" size) zucchini, peeled and sliced
parmesan cheese
In large (4 L) dish, place ingredients in order given, as for pizza. Sprinkle with Parmesan cheese. Cover and bake at 350 degrees F for 1 hour, or until zucchini is done.
I use the biggest Corningware casserole dish that I have. I think it's just under 5 qt.

I honestly didn't expect to be wowed by this recipe but we really enjoyed it. The veggies didn't get mushy even after cooking for an hour, and they balanced out the slightly salty sausage very nicely. And, it was so easy to make!
