An great recipe for a large group. Sausage and peppers are slowly cooked in a roaster oven making it easy to prepare in advance with little mess.

12 pounds Polish sausage
20 large bell peppers, any color
8 pounds onions
3 cans beer (or apple juice)
Cut the sausage into 2 to 3-inch pieces and place in an 18-quart roaster oven.
Cut the bell peppers in half and remove the stems, seeds, and ribs (if desired). Slice into 1/2-inch slices and add to the roaster oven. Slice the onions. Add to the roaster oven along with the beer. Stir gently.
Cover the roaster and cook at 280-300 degrees F for 4-5 hours or until the sausage is heated through and the vegetables are cooked. Stir the mixture occasionally during the cooking time.
Using a slotted spoon, pile sausage and vegetables onto buns and serve immediately.
