Italian Sausage And Zucchini Stir Fry

ingredients
1 pound Italian sausage
1/2 cup chopped onions
2 cups chopped tomatoes, seeds removed
4 cups unpared zucchini, julienne cut
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon Tabasco sauce
1/4 teaspoon oregano
Parmesan cheese
directions
Slice sausage in 1/4 inch slices; brown in wok or large skillet. Add onions when sausage is nearly done. Drain.
Add tomatoes, zucchini, lemon juice, salt, Tabasco sauce and oregano. Cook, uncovered, for about 5 minutes, stirring frequently.
Remove to serving plate; sprinkle with cheese. Serve with crusty Italian bread.

This is a good after work, don't-wanna-spend-a-lot-of-time-cooking recipe. I used it top instant rice and used a little more zucchini to expand the servings a bit. Also, I browned the sausage links first, before cutting them into coins, then added them back in at the simmer stage. They're easier to slice that way. And the sausage probably provides all the salt you would need for this dish, so go easy on adding any extra.

Delicious! We really enjoyed this recipe. Easy as can be and ready quite fast. If you want to increase the number of servings but make it a bit healthier, just increase the zucchini. We also used hot Italian turkey sausage to reduce the fat content and it was fabulous. We used Honeysuckle White but if you can get fresh ground from your local meat market that'd be even better.
