Ingredients:
1 tablespoon onions, julienne cut
1/2 jalapeno, julienne cut
1 teaspoon olive oil
4 ounces shredded pepper Jack cheese
3/4 cup milk
2 tablespoons pico de gallo (fresh salsa)
Tortilla chips and/or jicama and celery sticks, for dipping

Directions:

In a small skillet over medium-high heat, saute onion and jalapeno in olive oil until tender, 2 to 3 minutes.

Place shredded cheese in a microwave-safe bowl and microwave 20 seconds. Stir, then microwave in 10-second intervals, stirring after each, until melted and smooth.

Place sauteed onions and jalapenos in a small crock or serving dish. Add melted cheese, then milk; stir until smooth. Top with pico de gallo.

Serve with chips and/or vegetables for dipping.

Approximate values per serving: 295 calories, 23 g fat, 63 mg cholesterol, 17 g protein, 6 g carbohydrates, 0 fiber, 419 mg sodium, 70 percent calories from fat.
