This is a delicious non-alcoholic version of the classic recipe. It starts with a cooked custard-style base made with eggs, sugar, and milk. Rum extract, nutmeg and cream are added after the mixture is chilled.

4 cups milk
2 teaspoons rum extract
1/2 teaspoon ground nutmeg, plus more as needed
1 cup whipping cream, beaten until stiff peaks form

Combine the eggs, sugar, and salt in a heavy saucepan or in a double boiler over medium heat. Whisk together until uniform in color. While whisking, add the milk. Cook, stirring constantly, until the mixture is thick enough to coat the back of a spoon.

Remove the pan from the heat and let cool. Place the pan in the refrigerator and chill for 1 hour.

Stir the rum extract and nutmeg into the eggnog. Fold in the beaten whipping cream. Divide between individual glasses and sprinkle with additional nutmeg. Serve immediately.

    I overcooked this and the eggs kind of cooked. I put it in my Vitamix and fixed it-This was so good !! Can anyone tell me approx how long to cook this? Thank you.

    • It's hard to give a precise time as it depends on the burner temperature, temperature of the ingredients, etc. It should be around 6-8 minutes. You want the custard-style base to be thicker than cream, but not as thick as pudding. It should be like a runny pudding. Hope that helps!

    This is a fantastic eggnog! And it's family-friendly without the alcohol so even the kids can have some (of course, you can add some in if you wish for grownups who want it). The custard-like base cooked up beautifully and the entire recipe was easy to make. The hardest part was waiting for it to chill before adding the remaining ingredients.
