1 cup liquid egg substitute
4 cups skim milk
1 package (4-serving size) sugar-free instant vanilla pudding mix
1/8 teaspoon salt
1 teaspoon vanilla or rum extract
1/4 teaspoon ground nutmeg

directions

Place the egg substitute and skim milk in a blender. Process for 30 seconds on low speed.

With the blender running on low, slowly add the pudding mix through the feed tube. Add the salt, vanilla or rum extract, and nutmeg.

Cover the feed tube hole and blend for 2 minutes.

Transfer the eggnog to a pitcher (or leave in the blender container) and refrigerate for at least 2 hours before serving.

    One thing I don't like about this recipe is that it doesn't tell how much a serving is or how "low calorie" it is. I substituted a few things (non-fat plain soymilk and "just whites" liquid egg whites) and came up with these numbers: Entire Recipe: 500 calories 0 grams fat 0 grams cholesterol 46 grams protein 68 grams total carbohydrates 36 grams sugar Per Serving: (6 servings) About 8 fl oz or 1 cup 83 calories 0 grams fat 0 grams cholesterol 7.6 grams protein 11.3 grams total carbohydrates 6 grams sugar I found this tasted delicious and a great idea for a dieters and fellow health nuts during the holidays. (:
