ingredients
1 1/2 cup egg substitute 2 tablespoons artificial sweetener (Nutrasweet, Splenda, etc.) 2 tablespoons vanilla extract 1 quart heavy cream 2 cups water 1 tablespoon brandy extract freshly grated nutmeg
directions
Add the egg substitute and sweetener to a mixing bowl. Mix on medium speed until the mixture is fluffy and light. With the mixer running on low speed, add the vanilla, heavy cream, half of the water, and brandy extract. If the mixture is too thick, add some (or all) of the remaining water.
Place the eggnog in the refrigerator for 24 hours to let the flavors meld.
To serve, stir well then pour into glasses. Sprinkle the nutmeg over the individual servings.
