1 pound fresh cranberries
5 cups water
1 pinch salt
3 slices orange
1/2 cup sugar, plus more if needed
Rinse the fresh cranberries and pick out any that are soft or damaged. Place the cranberries, water, salt, and orange slices in a large saucepan over medium heat. Cook, stirring occasionally, for 10 minutes or until the berries have burst open.
Line a sieve with several layers of cheesecloth. Pour the cranberries and liquid through the cloth, straining the juice into another saucepan over medium-high heat. Add the sugar to the cranberry juice and bring to a boil. Let the cranberry juice boil for 2-3 minutes.
Adjust the flavor with additional sugar, if needed. Let the cranberry juice cool to room temperature then place in the refrigerator until well chilled.
