Pesto And Feta Chicken Pinwheels

ingredients
5 tablespoons pesto
4 ounces Feta cheese, softened
1/8 teaspoon freshly ground black pepper
4 boneless, skinless chicken breast halves
directions
Preheat oven to 350 degrees F. Spray a 8" pan with cooking oil.
Combine pesto, feta cheese, and black pepper. Set aside.
Place each chicken breast portion between 2 pieces of waxed paper and pound with a mallet to an even 1/4" thickness. Remove waxed paper from rough side and spread each portion with 2 tbsp. of pesto mixture.
Remove chicken from paper and roll up jelly roll style, securing with toothpicks. Place in prepared pan, seam side down. Bake for 25-35 minutes or until juices run clear when meat is pricked with a fork.
Let stand for 5 minutes, then slice and arrange on a plate. Spoon any remaining cooking liquid over the chicken.
