A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

Tender chicken breasts are baked with a light and crispy ranch-breadcrumb coating. This recipe can also be made as chicken nuggets by cubing the chicken in bite-sized pieces (note: you'll need to increase the amount of other ingredients since there will be more surface area to coat)
1/3 cup plain breadcrumbs
1 package (0.4 ounce size) dry ranch salad dressing mix
1/3 cup light sour cream
4 boneless, skinless chicken breast halves
Preheat oven to 375 degrees F. Lightly spray a baking sheet with non-stick cooking spray.
Combine the breadcrumbs and dry ranch dressing mix in a shallow dish, mixing well.
Place the sour cream in a shallow dish.
Dip each chicken breast into the sour cream, turning to coat on all sides evenly. Gently roll the chicken breast in the seasoned bread crumb mixture. Lightly pat the breadcrumbs onto the chicken so they adhere.
Place the chicken on the prepared baking sheet. Place in the oven and bake at 375 degrees F for 30 minutes or until the chicken is golden brown and cooked through.
Serve hot.

I used to make something very similar to this but instead of mixing the ranch dressing with the breadcrumbs I used to dip the chicken in ranch dressing from a bottle and then roll in panko crumbs and bake. Family loved it especially the picky kids, who are no longer kids or picky.

This was not one of my boyfriend's favorite. He complained that it was too simple and "boring" but I thought it was fine. It was cheap and easy to make. Maybe I can dress it up a bit next time with more exciting sides.

Next time I make it (and there WILL be a next time!!), I would double up on the dry ranch mix...I like a little more powerful flavor. Otherwise, very simple and a big hit!

this is a easy and good tasting dish. kids seemed to enjoy it alot. i used colby & monterrey jack cheese and it was still good. i recommend to "double up" on the ranch dressing mix and/or use seasoned bread crumbs for a little more flavor.

Don't let the simplicity of this recipe turn you off. This was FABULOUS! The ranch dressing mix gives the breading wonderful flavor and the sour cream (you can use fat free or light if desired) keeps the chicken very moist. We cooked it as directed and then turned on the broiler to give it a slightly crisper coating.
