Slow Cooker Herbed Chicken In Beer

ingredients
12 chicken breasts, no skin, no bone
salt and pepper, to taste
olive oil
2 tablespoons rosemary
2 tablespoons sage
2 tablespoons thyme
6 cloves garlic, pressed
2 cans beer (don't substitute)
directions
Salt and pepper the chicken breasts and brown them in a skillet.
Place the chicken in a slow cooker with the herbs, garlic and beer. Cook on high for several hours.
Remove the chicken breasts and set aside.
To make gravy, strain and pour juices into sauce pan and thicken with a roux or with a little cornstarch.
Serve over garlic mashed potatoes.

You are basically just poaching the chicken in seasoned beer. Makes for some very moist and flavorful chicken. I cooked it on low for 4 hours not high. I didn't use the "gravy" for it though. I just used the chicken in another recipe that called for cooked chicken. I don't think I'd care for the beer gravy though but the cooking method was excellent.
