ingredients

1 medium onion, chopped
4 carrots, sliced
4 stalks celery, sliced
8 skinless, boneless chicken breast halves, whole or cut up
1 teaspoon dried tarragon
1 teaspoon dried thyme
salt and pepper, to taste
1 can (10 ounce size) cream of chicken soup
1 envelope dry onion soup mix
1/3 cup white wine or apple juice
2 tablespoons cornstarch

directions

Put the onion, carrots, and celery in the crock pot in an even layer. Evenly top with the chicken.

Sprinkle the chicken with the tarragon, thyme, and salt and pepper.

Combine the cream of chicken soup with the onion soup mix until blended. Evenly pour the soup mixture over the chicken.

Cover the crock pot and cook on high for 3-4 hours.

During the last 30 minutes of cooking, combine the wine and cornstarch in a small bowl and whisk until smooth. Stir this into the sauce in the crock pot.

Uncover the crock pot and cook on high for 20-30 minutes or until the sauce is thickened, stirring occasionally.

Serve the chicken and sauce over rice if desired.

crock pot notes

Crock pots/slow cookers all heat differently. There is no standard among manufacturers. Cooking times are suggested guidelines based on our testing. Please adjust cooking times and temps to work with your brand and model of slow cooker.

recipe tips

For more flavor, sear the chicken breasts in a skillet for a few minutes before adding them to the crock pot.

Adjust the seasoning to taste before serving, especially after adding the cornstarch mixture.

Herb de Provence can be an excellent alternative to the thyme and tarragon if you want a slightly different flavor.

Make sure to stir occasionally during the last cooking phase to prevent the sauce from thickening unevenly.

Leftovers can be turned into a casserole by adding cooked pasta and cheese before baking until bubbly.

Try adding sauteed mushrooms or bell peppers to the dish for additional flavor.

For a lower-fat version, you can use fat-free cream of chicken soup or Greek yogurt instead of the cream soup.

common recipe questions

What type of chicken can I use for this recipe?

You can use skinless and boneless chicken breast halves as listed, but chicken thighs could also work well if you prefer darker meat. Bone-in chicken can be used, but cooking times may need to be adjusted.

Can I use fresh herbs instead of dried?

You can use fresh herbs instead of dried tarragon and thyme. Use approximately three times the amount of fresh herbs compared to dried, as fresh herbs are less concentrated in flavor. You may also want to reserve some of the fresh herbs to add towards the end of the cooking time for extra flavor.

Is there an alternative to the cream of chicken soup?

You can use a different cream soup (such as cream of mushroom or cream of celery). You can also make a homemade cream sauce or use a mixture of sour cream or Greek yogurt and chicken broth as a substitute for cream of chicken soup.

Can I omit the white wine or apple juice?

You can omit wine or apple juice, but consider adding an equal amount of chicken broth or water to keep the moisture ratio in the dish.

How do I know if the chicken is fully cooked?

The chicken is fully cooked when it reaches an internal temperature of 165 degrees F. Use a meat thermometer to check the thickest part of the chicken.

Can I use frozen chicken?

You can use frozen chicken, but cooking times will be longer. Make sure that the chicken reaches the safe internal temperature before serving. Note: we don't advise you to use frozen chicken but many people do. Since all crock pots heat differently it isn't guaranteed that yours will cook the chicken to a safe temperature fast enough if starting from frozen.

What if I don't have a crock pot?

You can make this dish in a Dutch oven or a large skillet on the stovetop. Cook on low heat, covered, stirring occasionally until the chicken is cooked through.

How do I store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Make sure the dish is cooled before packaging it up.

Can the dish be frozen?

Yes, it can be frozen. Store in an airtight container or freezer bag for 2-3 months in the freezer. Thaw overnight in the fridge before reheating.

How do I reheat leftovers?

You can cook them in a skillet over medium-low heat until heated through. You can also reheat the chicken in the microwave, just making sure to not overcook it or it may become dry and tough.

tools needed

Crock Pot: For cooking the chicken and vegetables slowly, allowing all the flavors to blend together. Make sure it has a tight-fitting lid for proper cooking.

Measuring Cups and Spoons: For measuring ingredients such as the white wine, tarragon, and cornstarch.

Small Bowl: Used for combining the white wine or apple juice with the cornstarch before adding it to the sauce.

Whisk: Important for mixing the wine and cornstarch until smooth.

Chopping Knife: For chopping the onion, carrots, and celery before placing them in the crock pot.

Cutting Board: Provides a stable surface for chopping the vegetables.

what goes with it?

Rice Pilaf: Serve the French Country Chicken over a fragrant rice pilaf to soak up the creamy sauce. The mild flavors of the pilaf will enhance the dish without overpowering it.

Crusty Baguette: A slice of fresh, crusty baguette is perfect for mopping up that delicious creamy sauce. Plus, you can't beat the simplicity.

Garlic Mashed Potatoes: Pair the chicken with buttery garlic mashed potatoes for a comforting, homestyle meal.

Steamed Green Beans: Lightly steamed green beans add a refreshing crunch and vibrant color to the plate. Their slight bitterness contrasts nicely with the richness of the chicken and sauce.

Creamy Mushroom Risotto: Serve the chicken alongside a creamy mushroom risotto for a more indulgent meal. The earthiness of the mushrooms pairs wonderfully with the herbs used in the chicken.

Herbed Quinoa: A light, herbed quinoa side provides a nutritious alternative to rice while maintaining a similar texture.

Potatoes Dauphinois: Pair the chicken with a creamy, cheesy potatoes dauphinoise for another indulgent pairing.

Roasted Garlic Mushrooms: Earthy roasted garlic mushrooms pair wonderfully with chicken, adding an umami depth that complements the herbs in the recipe.

Creamy Polenta: A soft, creamy polenta base provides a gentle, comforting backdrop with a subtle corn flavor.

Side Caesar Salad: A crisp classic Caesar salad brings in some crunch and a savory kick, providing a nice contrast to the tender chicken and creamy sauce.

beverage pairings

Wine Pairings
Chardonnay: A creamy, buttery Chardonnay will vibe well with the rich cream of chicken soup and the overall creamy sauce. Look for one that's been aged in oak for that smooth, luxurious finish.

Sauvignon Blanc: A bright and zesty Sauvignon Blanc can balance out the creamy elements and cut through the richness. Aim for one that has notes of citrus and green apple.

Pinot Grigio: This light and crisp white wine has a subtle fruitiness to it that won't overpower the delicate flavors of the chicken. Grab one with floral hints to complement the herbs like tarragon and thyme.

Other Alcohol Pairings
Chardonnay-based Sparkling Wine: Pop open a bottle of bubbly! A sparkling wine made from Chardonnay will echo the creaminess in the dish while adding some fun fizz.

Gin & Tonic: With its crisp and refreshing profile, a gin and tonic will offer a nice contrast to the rich chicken dish. You can even toss in some cucumber or lemon for an added zing.

Light Ale: A light, crisp ale balances well with the flavors of the chicken and won't be too heavy on the palate. Look for one with a hint of fruitiness that'll keep things bright.

Non-Alcoholic Pairings
Lemonade: A good old-fashioned lemonade will add a nice citrusy tang that complements the creamy sauce and fresh herbs without competing for attention.

Herbal Iced Tea: An herbal iced tea with chamomile or mint will offer a calming note that enhances the chicken's flavors.

Vegetable Juice: A light vegetable juice can bring a bit of earthiness that pairs beautifully with the dish. Think carrot and celery juice for a fun twist.
