ingredients
4 boneless, skinless chicken breast halves
1/2 teaspoon salt
1/8 teaspoon white pepper
1/3 cup butter
1 onion, chopped
4 cloves garlic, minced
2 tablespoons lemon juice
1/2 teaspoon lemon peel
2 tablespoons chopped fresh parsley
directions
Sprinkle chicken with salt and pepper and cut into strips; set aside.
In large skillet, melt butter over low heat. Add onion and garlic; cook until tender, about 5-7 minutes. Add chicken and increase heat to medium.
Cook and stir until chicken is cooked through, about 4-6 minutes.
Stir in lemon juice, lemon peel, and parsley and serve immediately over hot cooked rice or a rice pilaf.
